How to Make Smoked Tomatoes

A recipe for smoked tomatoes grilled with herbs. Hardwood chips such as hickory, apple, or cherry are used for smoking.


Ingredients:

  • 8 plum tomatoes (about 900 g), cut in half and seeded
  • 4 sprigs of rosemary or thyme
  • Coarse salt and freshly ground pepper
  • 2 cups hickory, cherry, or apple wood chips
  • 2 22cm disposable round pie pans
  • Soak wood chips in water for 1 hour, then prepare the grill for smoking.
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Season the tomatoes with salt and pepper. Arrange the herbs in disposable molds, then place the tomatoes cut-side down.
  • Step 2
  • Once the grill reaches 120 degrees, place the tomato pans on the cooler side.

    Close the lid and let the tomatoes smoke for 30-40 minutes, until softened. If using a gas grill, turn off the flame and let the tomatoes cook, covered, for another 10 minutes (this will infuse more flavor). If using a charcoal grill, this step is optional.

    Remove tomatoes from the grill and serve hot or at room temperature.

    You can cook 3 more types of vegetables in the same way.


    Corn: 4 cobs, peeled and cut into two pieces.

    Red bell pepper: 2 large, cut into quarters and remove seeds.

    Shiitake mushrooms: 250 gr., peeled.
