Slice 700 g of small green tomatoes into wedges. Bring 2 cups of water and 1/2 cup of white wine vinegar to a boil in a saucepan. Add the tomatoes in batches and cook for about 3 minutes; remove from the water and let cool.

In a large bowl, combine 1/4 cup white wine vinegar, olive oil, chopped parsley, and mint, and 1 tablespoon each coarse salt, sugar, and crushed Fresno chili pepper. Add the tomatoes and toss. Chill the tomatoes for 4 hours or overnight.
