These quick pickled cucumbers can be served immediately after preparation, enjoying their refreshing flavor, which is beautifully complemented by cilantro. To quickly infuse the cucumbers with the spicy mixture of rice vinegar, sugar, and salt, slice them very thinly, preferably using a mandoline. The flavor is tart and pleasantly sweet, but they are even more delicious served chilled. They make a great addition to hot dishes, salads, and also an excellent snack with spirits.
