Even a jar of store-bought pickles can be transformed into a unique appetizer that will surprise everyone with its new flavor. Drained, halved pickles are tossed in oil with sliced fresh onion, grilled, and then topped with more cucumber marinade. The vegetables gain a richer flavor and acquire a smoky aroma. A great addition to grilled meats or kebabs, as well as salads and sandwiches.

Drain the liquid from an 800g jar of halved pickles into a separate container. Pat the pickles dry with paper towels, toss with 1 onion (sliced) and a little olive oil. Grill, turning, until crispy, about 3-4 minutes. Let cool, then return to the jar and add the brine. Refrigerate and store for up to 5 days.
