This quick shrimp marinade is a simplified version of a popular Vietnamese sauce. nyok mam cham, a mixture of Asian fish sauce, lime juice, sugar, and chili pepper. Instead of fresh chili pepper, use crushed red pepper flakes to save time. Finely grate the garlic to prevent it from burning on the grill.
The recipes use measuring containers with the following volumes:

1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.

1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
- 3 large limes (about 280 g)
- 2 large cloves of garlic
- 2 tablespoons fish sauce
- 2 tbsp. l. rapeseed oil (canola)
- 1 tbsp. sugar
- 1/4-0.5 tsp crushed red pepper flakes
- 450 g large shrimp (16/20), peeled and deveined
- 1 small green onion, thinly sliced
- 1/4 cup cilantro leaves

Cooking the dish according to the recipe:
- Zest and juice two limes (you should have about 1 tablespoon zest and about 1/4 cup juice) and add to a medium glass bowl. Finely grate the garlic and add to the bowl along with the fish sauce, canola oil, sugar, red pepper flakes, and shrimp. Stir to combine.
- Place in the refrigerator to marinate for 30 minutes. Meanwhile, slice the remaining lime into wedges and set aside for serving.
- Heat a large grill pan over medium heat. Remove the shrimp from the marinade and place them on a baking sheet lined with paper towels. Grill the shrimp, a few at a time, until lightly charred on both sides and cooked through, about 3 minutes total. Transfer to a large plate.
- Sprinkle with chopped green onions and cilantro and serve with lime wedges.
