Ingredients:
- 24 large shrimp, peeled
- 3 tablespoons chopped thyme leaves
- 1.5 tbsp ground ancho pepper
- 6 cloves garlic, coarsely chopped
- 3/4 cup olive oil
- 3 cloves of garlic, thinly sliced

- Preheat grill to medium heat.
In a small bowl, whisk together 1/4 cup oil, 2 tablespoons thyme, ancho chili, and minced garlic. Thread the shrimp onto skewers and brush with the marinade.
Step 2 - Pour the remaining 1/2 cup of oil into a small saucepan, add the thinly sliced garlic, and fry until golden brown. Remove the garlic with a slotted spoon and transfer to a paper towel. Reserve the oil. Step 3
- Preheat grill to high heat.

Remove the shrimp from the marinade, season with salt and pepper and fry until golden brown, 1.5 minutes on each side.
Step 4 - Remove the cooked shrimp from the skewers, place them on a platter, and drizzle with a little of the oil the garlic was fried in. Sprinkle with the fried garlic, thyme, and oregano leaves.
To accompany this dish, use a Sauvignon Blanc wine.
