Ingredients:

  • 450 g of green tomatoes, halved
  • 1 green bell pepper, cut into strips
  • 2 medium zucchini slices, halved
  • 1 onion, halved and thinly sliced
  • 1 chopped jalapeño pepper
  • 1/2 cup salt
  • 1/2 cup apple cider vinegar (read)
  • 1 cup brown sugar
  • 1 teaspoon celery seeds
  • 1 tsp. mustard seeds
  • 1 teaspoon ground ginger
  • 1 cinnamon stick
  • 1/2 teaspoon turmeric
  • 2 bay leaves
  • 1/4 tsp cloves
  • 1/2 teaspoon black peppercorns
  • 2 tbsp. salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare the vegetables, sprinkle with 1/2 cup of salt, and let sit overnight. Drain any excess juices and place the vegetables in a heatproof bowl. Place the remaining ingredients in a saucepan and bring to a boil.

    Pour the marinade over the vegetables and let them cool. Refrigerate and serve as needed. Can be stored for up to 2 weeks.
