In the southern US, chow chow is a type of pickled vegetable relish. One of the most delicious variations is chow chow with tomatoes. This recipe uses tomatoes of various heirloom varieties and colors. They have a sweeter flavor and are simply delicious when pickled with spices. To make chow chow, sliced ​​tomatoes and onions are simmered for 5 minutes in a marinade made with apple cider vinegar, sugar, ginger, turmeric, dry mustard, celery seed, and pickle relish. Cool and serve immediately. Relish goes well with sausages, grilled meats, burgers, and sandwiches.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 0.9 kg of firm, non-hybrid tomatoes (different varieties and colors), cut into large pieces
  • 4 cups apple cider vinegar
  • 1 cup of sugar
  • 2.5 cm of grated ginger root
  • 1 tbsp mustard powder
  • 1 tbsp turmeric
  • 3 tablespoons mustard seeds
  • 3 tablespoons celery seeds
  • 1.5 tbsp. pickling seasoning
  • 2 medium onions, chopped

Cooking the dish according to the recipe:


  1. In a large saucepan, combine vinegar, sugar, ginger, dry mustard, turmeric, mustard seeds, celery seeds, seasoning for pickles and 1 teaspoon of salt. Bring to a boil over high heat, then reduce heat and simmer for 15 minutes to allow the spices to release their aromas.
  2. Increase the heat again; once the mixture reaches a vigorous boil, add the tomatoes and onions, stirring to coat evenly. Reduce the heat and simmer for 5 minutes. Remove from heat and cool to room temperature.
