Make a savory relish with black-eyed beans, a great appetizer for a main course. It can also be spread on bread, used in sandwiches, wrapped in tortillas, or served with meat as a dip. The beans are simmered in chicken broth with bacon, tomatoes, thyme, garlic, and dried hot peppers until very tender. The thyme and chili peppers are then removed from the pot, and the bean liquid is pureed in a blender and then mixed back into the relish along with fresh cilantro, green onions, and lemon juice. The beans are infused with a rich, aromatic bouquet.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 3 cups dry black-eyed beans
  • 2 thick slices of bacon
  • 1/4 bunch fresh thyme
  • 2 tomatoes, cut into 4 pieces
  • 5 dried chili peppers
  • 5 cloves of garlic
  • 4 cups lightly salted chicken broth
  • 1/4 cup chopped fresh cilantro, plus extra for serving
  • 4 green onions, chopped
  • Juice of 1 lemon
  • Extra-virgin olive oil, to drizzle

Cooking the dish according to the recipe:


  1. Combine the beans, bacon, thyme, tomatoes, chili, and garlic in a large saucepan. Season with salt and pepper to taste and pour in the chicken broth. Simmer over medium-low heat until the beans are tender, about 1 hour.
  2. Drain the liquid into a separate bowl. Remove the thyme and chili peppers. Remove the bacon, tomatoes, and garlic from the beans. Chop the bacon and return it to the pot along with the cilantro, onion, and lemon juice.

  3. Puree the bean broth with the tomatoes and garlic in a blender. Stir the puree into the beans and season with salt and pepper, if needed. Sprinkle with cilantro and drizzle with olive oil.
