To make a delicious side dish with fresh or frozen lima beans, simply sauté them in bacon drippings, drizzle with lemon juice, and serve topped with crispy bacon bits and fresh herbs.


Ingredients:

  • Two packages (280 g) of thawed lima beans
  • 3 strips of bacon
  • 1 tsp. grated lemon zest
  • 1 teaspoon lemon juice
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large skillet over medium heat, fry 3 strips of bacon until crisp, 10 minutes; drain on paper towels and crumble. In the remaining fat in the skillet, fry 1 finely chopped shallot for 1 minute.
  • Step 2
  • Add 1/2 cup water, two 10-ounce packages of thawed lima beans, and 1/4 teaspoon coarse salt. Bring to a boil; cook, stirring occasionally, until the beans are tender, 5 to 7 minutes. Add 1 teaspoon each of grated lemon zest and lemon juice. Sprinkle with cooked bacon and chopped parsley.
