This white bean side dish is ready in minutes if you use canned beans instead of raw ones. All you have to do is infuse them with Mediterranean flavors by warming them in a pan with tomatoes, rosemary, garlic, red pepper, and fresh herbs. Finally, sprinkle some Parmesan cheese on top and broil for a couple of minutes until the beans are golden and cheesy. Despite the simplicity of the preparation, the dish tastes like it's been tinkered with for hours.

In a large skillet over medium-high heat, sauté 2 cloves garlic and 1/4 teaspoon red pepper flakes in olive oil for 1 minute. Add 1 chopped plum tomato and 1 sprig of rosemary and cook for another 2 minutes.
Add 2 cans of rinsed white beans and cook, breaking up the beans partially with a spoon, for 5 minutes. Remove the rosemary. Stir in 0.5 cups of water and some chopped parsley, season with salt. Sprinkle with Parmesan cheese and broil until golden brown. Drizzle with olive oil.
