Lima beans (or lima beans) are typically found in complex side dishes or salads, but in this recipe, they're the star! Enjoy the sweet flavor of fresh lima beans by simply sautéing them with onions in butter. This recipe also works with frozen beans. Serve as an appetizer or as a side dish with meat dishes.

- 1 onion, finely diced
- 4 cups fresh, peeled lima beans or two 10-ounce packages frozen lima beans
- 1 and 1/4 teaspoons sugar

Cooking the dish according to the recipe:
- In a small saucepan, bring about 3 1/2 cups water to a boil.
- Heat a medium skillet over medium-low heat and add oil. Saute the onion in the oil, gradually adding 1 cup of boiling water and stirring frequently, until the onion is soft and golden brown, 15-20 minutes.
- Add the lima beans and cook until they begin to soften, another 10 minutes. Add the sugar, a little salt and red pepper flakes, and the remaining water.
- Cover the pan and simmer the beans until tender, about 40 minutes. Using the back of a wooden spoon, gently mash one-third of the beans and stir. Serve warm.
