Carrot relish is a cross between a sauce and a jam, with distinct vegetable bites. Using a vegetable peeler, peel the zest from 1 orange and 1 lemon in strips; then slice thinly. In a saucepan, combine the zest and juice of 1 orange and 1 lemon, 5 cups grated carrot, 3/4 cup sugar, 3/4 cup apple cider vinegar, 1 1/2 cups water, and 1 1/2 teaspoons each ground coriander, mustard seeds, and salt. Bring to a simmer over medium heat and cook until thickened, about 45 minutes.
