These delicious and healthier turkey sandwiches are a welcome substitute for fatty pulled pork. The meat for these sandwiches should be very tender and easily torn into pieces with a fork. To achieve this, braise turkey thighs in a slow cooker with a sauce made from tomato ketchup, mustard, and brown sugar. This will impart a sweet flavor to the sauce, mimicking barbecue sauce. Serve the pulled turkey on soft buns with a vegetable garnish of coleslaw and pickles.

Ingredients for the recipe:
- 1 small red onion, chopped
- 4 turkey thighs (about 1.8 kg)
- 1 tbsp. chili powder
- 1 tsp ground cumin
- 0.5 cups ketchup
- 1/4 cup brown sugar
- 2 tbsp mustard
- 1 tbsp apple cider vinegar

Cooking the dish according to the recipe:
- Spread the onions in the bottom of a 6- to 8-quart slow cooker. Rub the turkey thighs with chili powder, cumin, 1 teaspoon salt, and 1/2 teaspoon pepper and place them on top of the onions. Mix the ketchup with sugar and mustard and pour it over the turkey. Cover and cook on low for 5-6 hours or on high for 3-4 hours. The turkey should be very tender, falling off the bone.
- Remove the lid and stir. Let cool for 10 minutes. Using two forks, shred the meat, discarding the bones. Add vinegar, salt, and pepper to taste. Serve on buns with pickles and/or coleslaw, if desired.
Note
If necessary, you can set the temperature on the slow cooker higher, reducing the cooking time.
