Instead of regular buns, these sandwiches use whole-grain pita breads. Open them like pockets and fill them with the filling. Inside each hummus-smeared pita is a small turkey and hummus patty (slider), fresh tomatoes, and a cucumber salad with feta and mint. These Middle Eastern-style sandwiches are delicious, juicy, and healthy. They're a good source of protein and fiber. For a richer, more vibrant flavor, use hummus with hot or sweet roasted peppers.

Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Combine cucumber, feta, vinegar, mint, 1 tablespoon olive oil, and a pinch each of salt and black pepper in a bowl; cover and refrigerate.
  • Step 2
  • In a bowl, combine ground turkey, 1/2 cup hummus, parsley, and cilantro, and season generously with pepper. Wet your hands and form the mixture into 16 small patties, about 1 cm thick.
  • Step 3
  • In a medium cast iron skillet, heat 1.5 tablespoons olive oil over medium-high heat. Add half the patties and cook until browned and cooked through, about 2 minutes per side. Transfer to a plate. Cook the remaining patties in the remaining 1.5 tablespoons olive oil.
  • Step 4
  • In a bowl, mix the remaining 1/2 cup hummus with a little hot water. Spread a little hummus inside each pita; fill with tomato slices, a turkey patty, and some of the cucumber salad.
