Turkey and Hummus Slider Sandwiches

Instead of regular buns, these sandwiches use whole-grain pita breads. Open them like pockets and fill them with the filling. Inside each hummus-smeared pita is a small turkey and hummus patty (slider), fresh tomatoes, and a cucumber salad with feta and mint. These Middle Eastern-style sandwiches are delicious, juicy, and healthy. They're a good source of protein and fiber. For a richer, more vibrant flavor, use hummus with hot or sweet roasted peppers.

Ingredients:
- 0.7 kg ground turkey
- 1 cucumber, diced
- 0.5 cup crumbled feta
- 2 tablespoons red wine vinegar
- 1 teaspoon dried mint
- 4 tablespoons extra-virgin olive oil
- 1 tbsp. hummus, preferably spicy or with roasted peppers (about 200 gr.)
- 0.5 cup chopped fresh parsley
- 2 tsp ground coriander
- 16 pcs. mini pitas with pockets, preferably whole grain, open each pita and heat
- 2 - 3 plum tomatoes, thinly sliced

Preparation:
- Step 1
- Combine cucumber, feta, vinegar, mint, 1 tablespoon olive oil, and a pinch each of salt and black pepper in a bowl; cover and refrigerate. Step 2
- In a bowl, combine ground turkey, 1/2 cup hummus, parsley, and cilantro, and season generously with pepper. Wet your hands and form the mixture into 16 small patties, about 1 cm thick. Step 3
- In a medium cast iron skillet, heat 1.5 tablespoons olive oil over medium-high heat. Add half the patties and cook until browned and cooked through, about 2 minutes per side. Transfer to a plate. Cook the remaining patties in the remaining 1.5 tablespoons olive oil. Step 4
- In a bowl, mix the remaining 1/2 cup hummus with a little hot water. Spread a little hummus inside each pita; fill with tomato slices, a turkey patty, and some of the cucumber salad.
