The meaty caps of shiitake mushrooms, with their rich flavor and flat shape, make a delicious alternative to beef patties in these miniature sandwiches. They also cook faster, making them ideal for vegetarians and picnics. Fry the caps, placing a slice of cheese on each for a few seconds before they're done, until the cheese melts deliciously. Serve the shiitake on appropriately sized slider buns, drizzled with honey and Dijon mustard, and topped with a fresh spinach leaf.

Toss 12 large shiitake mushroom caps with 1/4 cup olive oil, 1 tablespoon each minced garlic and thyme, 1/2 teaspoon coarse salt, and freshly ground black pepper to taste. Cook the shiitake mushrooms over medium-high heat until tender, 1 to 2 minutes per side; top each cap with 1/2 slice of Monterey Jack cheese for the last 30 seconds. Serve the mushrooms on Hawaiian or slider buns with honey, Dijon mustard, and baby spinach.
