Jackfruit, also known as Indian breadfruit, is a great meat substitute for vegetarian burgers. Simmer it in barbecue sauce, mash it up, and you'll be able to tell it apart from pulled pork. Spoon the filling onto halved buns, top it with coleslaw made with cabbage and carrots in a vinegar dressing, and enjoy. These sandwiches are so delicious and savory, you won't even miss the meat.

Ingredients:

  • 240 g of vegetable mixture for cabbage salad
  • 4 teaspoons apple cider vinegar
  • 2 x 565g cans of jackfruit in brine, rinsed and patted dry
  • 2 tsp chili powder
  • 2 tablespoons of vegetable oil
  • 3/4 cup barbecue sauce
  • 1-2 tbsp brown sugar, optional
  • 8 large potato buns
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a medium bowl, combine the coleslaw, apple cider vinegar, 1/2 teaspoon salt, and a pinch of ground black pepper. Cover with plastic wrap and refrigerate until ready to serve.
  • Step 2
  • In a large bowl, combine the jackfruit with the chili powder and 1/2 teaspoon each of salt and pepper. Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat. Add the jackfruit and cook, stirring occasionally, until fragrant, 2-3 minutes.
  • Step 3
  • Add the barbecue sauce to the skillet along with 3 cups of water, stir, cover, and reduce heat to low. Simmer, stirring occasionally, until tender, 45-50 minutes. Then remove the lid, increase heat to high, and simmer until the sauce darkens and thickens, 4-5 minutes. Remove from heat.
  • Step 4
  • Using a potato masher or a wooden spoon, mash the jackfruit until it's a pulled pork consistency. Season with salt and pepper, and optionally add brown sugar if you prefer it sweeter. Serve on potato buns with coleslaw.
