A simple homemade barbecue sauce turns tempeh into a stunning vegan steak, perfect for grilling on your backyard grill. Soy tempeh is rich in protein and perfect for grilling, but to ensure the sauce soaks in, make shallow slits in each piece. A good barbecue sauce should have the perfect balance of acidity, umami, and sweetness, and this homemade smoky sauce hits the spot! In just a few minutes on the grill, you'll have glossy steaks with a true summer flavor.

Ingredients:

  • 0.5 cups ketchup
  • 1/4 tbsp. natural maple syrup
  • 1 tbsp Dijon mustard, vegan if needed
  • 1 tbsp. apple cider vinegar
  • 1 tbsp Worcestershire sauce, vegan if needed
  • 0.5 tsp smoked paprika
  • 0.5 tsp coarse salt
  • 0.5 tsp freshly ground black pepper
  • 2 pieces of soybean tempeh, 220 g each.
  • Vegetable oil for greasing
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Combine ketchup, maple syrup, Dijon mustard, vinegar, Worcestershire sauce, smoked paprika, salt, and pepper in a small saucepan. Bring to a simmer over medium heat. Continue to cook, stirring occasionally, until the sauce thickens and reduces by half, about 5 minutes. Remove from heat and set aside to cool.
  • Step 2
  • Preheat a grill or grill pan over medium heat.
  • Step 3
  • Meanwhile, cut each tempeh block in half, parallel to the cutting board, to make a total of 4 thin slices, then cut each block in half crosswise. Carefully make diagonal cuts in the tempeh to create a grid pattern.
  • Step 4
  • Grease the grill with vegetable oil. Generously coat the cut side of the tempeh with about one-third of the barbecue sauce, allowing it to ooze into the crevices.
  • Step 5
  • Grill, sauce side down, without moving, until well-charred, about 4 minutes. Brush the tempeh with another third of the barbecue sauce, then flip and grill, without moving, until well-charred, about 4 more minutes. Brush the tempeh with the remaining barbecue sauce. Transfer the tempeh to a platter and serve immediately.
