A truly great marinade should combine all the key flavors: sweet, savory, sour, and perhaps a little heat. This marinade combines all of the above with honey, Sriracha sauce, and plenty of spices that enhance the flavor of tempeh (or any protein, really!), coating it with a sticky glaze as it bakes. Marinated tempeh can be cooked in the oven, on the grill, or in an air fryer.

Ingredients:

  • 1/3 tbsp. honey or agave nectar
  • 2-3 tablespoons Sriracha sauce
  • 1 tbsp. l. rice vinegar
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp smoked paprika
  • 220 g tempeh
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In an 8x8 inch baking dish or large shallow bowl, combine honey, Sriracha sauce, vinegar, garlic powder, onion powder, smoked paprika, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Stir to combine.
  • Step 2
  • Cut the tempeh into desired slices (e.g., cubes, triangles, or thin slices). Place on a microwave-safe plate and pour 1/4 cup water over it. Cover with a damp paper towel and microwave on high power until the tempeh is tender and has absorbed some of the liquid, about 4 minutes. Drain any excess water.
  • Step 3
  • Place the warm tempeh pieces in a single layer in the marinade. Tilt the pan several times to ensure the marinade is evenly distributed. Marinate at room temperature for at least 30 minutes, turning the pieces and tilting the pan every 10 minutes, or cover the pan with plastic wrap and refrigerate overnight.

  • When the tempeh is done, remove it from the marinade (do not discard the marinade) and grill, oven, or air fryer as follows:

  • Grilled tempeh:
    Preheat a grill or grill pan over medium heat. Grill the tempeh pieces, brushing them with the remaining marinade, until golden brown, about 5 minutes per side.
  • Step 6
  • Oven:

    Preheat oven to 230°C (430°F). Line a baking sheet with parchment paper and arrange the tempeh pieces on top, spacing them 1/2 inch (1 cm) apart. Bake, brushing with the remaining marinade and turning occasionally, until lightly browned, about 20 minutes.
  • Step 7
  • Air fryer:

    Line the basket of a 6-quart air fryer with foil or parchment paper. Working in batches, arrange the tempeh pieces in a single layer, slightly separating them, and cook at 375°F (190°C) until golden brown, about 10 minutes. Remove and immediately brush the pieces with the remaining marinade. Serve immediately or transfer to a tightly sealed container and refrigerate for up to 1 week.
