Grilled chicken and pickled Chinese cabbage sandwiches

When planning a buffet or a party for friends, prepare an appetizer in the form of slider sandwiches with spicy grilled chicken. Slider sandwiches are typically made on miniature buns, only about 5 cm in diameter. Cut them in half, toast them, and fill them with juicy and flavorful chicken. Top with pickled cabbage and carrots, which add a pleasant crunch and freshness, and drizzle with honey-mustard dressing. Despite their small size, these mini burgers are a satisfying treat.


Ingredients:


Chicken in marinade
  • 1 kg of skinless and boneless chicken thighs
  • 2 tablespoons hoisin sauce
  • 2 tablespoons of honey
  • 2 tablespoons soy sauce
  • 1 teaspoon Chinese 5-spice seasoning
  • 0.5 tsp crushed red pepper
  • 0.5 tsp. dark sesame oil
  • Vegetable oil for greasing the grill grate
  • 2 tablespoons toasted sesame seeds
  • Butter for buns
  • 12 - 16 slider buns

Pickled Chinese cabbage and carrots
  • Half a small head of Chinese or Napa cabbage, washed and finely shredded (about 4 cups)
  • 1 tbsp. rice vinegar
  • 1 tbsp. sugar
  • 1.5 tsp salt
  • 0.5 cup grated carrots
  • 0.5 tsp crushed red pepper flakes

Hot mustard with honey
  • 1/4 cup dry mustard powder
  • 1/4 cup boiling water
  • 2 tablespoons of honey
  • 1 tbsp. vegetable oil
  • 1 tsp. dark sesame oil
  • 0.5 tsp salt
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • ChickenIn a bowl, combine hoisin sauce, honey, soy sauce, 5-spice seasoning, red pepper, and sesame oil. Place the chicken in a sealable plastic bag, pour half of the marinade over it, and refrigerate for 3-4 hours. Stir the chicken once during this time. Set the remaining marinade aside for seasoning the finished chicken.
  • Step 2
  • MustardIn a bowl, mix mustard powder, boiling water, honey, oil and salt until smooth.

    Making sandwichesPreheat a gas or charcoal grill to medium heat. Brush the grill with vegetable oil. Grill the thighs for 8 to 10 minutes per side, until a meat thermometer reads 165°F (74°C). Let the chicken rest for 5 minutes, then shred and toss with the marinade. Sprinkle with sesame seeds.
  • Step 3
  • Split the buns, brush with butter, and grill for 1–2 minutes on each side until crisp. Place a generous portion of chicken on the bottom halves of the buns, top with a handful of pickled cabbage and carrots, and drizzle with hot mustard.

    Bring 0.5 cups of water, vinegar, sugar, and salt to a boil. Once the sugar has dissolved, remove from the heat and add the carrots, red pepper, and cabbage. Stir and let sit for at least 30 minutes. Transfer to a bowl and let cool completely.
