Ingredients:

  • 1 small red onion, cut into thin half rings
  • Finely grated zest and juice of 1 lemon
  • 1 teaspoon of sugar
  • Coarse salt and freshly ground pepper
  • 1 small bunch dill, finely chopped (about 1 cup)
  • 1/4 cup walnuts
  • 1 small clove of garlic
  • 1/3 cup olive oil
  • 1 (1.1 kg) cooked grilled chicken, skin removed, boned and sliced
  • 2 tomatoes, cut into slices
  • 1/2 bunch green leaf lettuce, torn by hand
  • 8 slices white wheat bread, lightly toasted
  • Chips, for serving (optional)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Pickle the onion: In a bowl, combine the red onion, lemon juice, sugar, 1/4 cup water, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Let the onion marinate while you prepare the other ingredients.
  • Step 2
  • Prepare pesto sauce: In a food processor or blender, puree the dill, walnuts, and garlic. Add the olive oil and blend until smooth. Transfer the pesto sauce to a large bowl and stir in the lemon zest and 1/2 teaspoon each of salt and pepper. Add the chicken to the bowl and toss with the pesto sauce.
  • Step 3
  • Prepare vegetables: Remove the onions from the marinade and squeeze them lightly. Drizzle the tomatoes with olive oil and season with salt and pepper.
  • Step 4
  • Assemble the sandwiches: place on 4 slices white bread Top with lettuce leaves, then tomatoes, chicken, pickled onions, and the remaining slices of bread. Serve with chips.
