An easy-to-make side dish that pairs perfectly with any main course. New potatoes are boiled in their skins, preserving all the beneficial micronutrients found in the core and skin, and lightly mashed with butter, milk, and pesto sauce. Thanks to the pesto, the mashed potatoes, with minimal effort, are infused with a rich basil and nutty flavor, beautifully balanced by the butter. Serve with sour cream or fresh ricotta and enjoy the deep, creamy, and spicy flavor of this side dish.
