A side dish of mashed potatoes in their skins with kale, dressed with olive oil instead of butter, is packed with a bouquet of rich flavors. Small red potatoes, boiled in their skins, are mashed together with kale sautéed with onions and garlic. A little milk gives the side dish a slightly creamy flavor and a creamier texture. Unlike regular mashed potatoes, this mashed potato is rich in healthy fiber and looks more festive. Serve it with any meat, fish, or poultry dish.

Recipe:


Boil 1 lb (0.7 kg) small red potatoes in salted water until tender, 15-20 minutes. Set aside 1 cup of the cooking liquid and discard the rest. In the same pan, sauté 2 chopped shallots and 2 chopped garlic cloves in olive oil over medium-high heat until soft, 2 minutes. Add 4 cups of chopped kale and 1/2 cup of the cooking liquid; simmer for 5 minutes. Add 1/2 cup of milk and bring to a boil. Remove from heat, add the potatoes, 3 tablespoons of olive oil, and some chopped parsley. Mash, adding more cooking liquid if necessary. Season with salt and pepper to taste.
