This soy sauce tteokbokki recipe is inspired by gunjung tteokbokki (royal tteokbokki), which dates back to Korea's Joseon Dynasty. Chewy rice balls are stir-fried with beef and vegetables and soaked in a savory sauce. This dish is quick to prepare and perfect for both everyday and special occasions.

Ingredients:

  • 700 g tteok (glutinous rice cake)
  • 1/4 cup soy sauce
  • 1 tbsp. minced garlic
  • 1 tbsp. l. rice vinegar
  • 1 tbsp. vegetable oil
  • 340 g thinly sliced ​​ribeye steak (bulgogi)
  • Half a large onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 8 shiitake mushrooms, thinly sliced
  • 1 tbsp oyster sauce
  • 0.5 tsp ground black pepper
  • 6 green onions, cut into 2cm pieces.
  • 1 tsp. sesame oil
  • Toasted sesame seeds for sprinkling
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Soak the tteok in cold water for 30 minutes, separating any stuck pieces. Drain and set aside.
  • Step 2
  • In a small bowl, combine soy sauce, garlic, rice vinegar and 1 cup water.
  • Step 3
  • Heat vegetable oil in a large skillet or wok over medium heat. Add the ribeye steak and cook, stirring frequently, for 2–3 minutes. Use chopsticks to tear any large pieces into smaller pieces.
  • Step 4
  • Add the tteok and onion and stir. Add the soy sauce mixture and cook, stirring occasionally to prevent burning, until the tteok is tender and the liquid has almost evaporated, 8–10 minutes.
  • Step 5
  • Add the bell peppers, mushrooms, oyster sauce, and black peppercorns. Cook, adding a little water if the tteok starts to stick, until the vegetables are tender, 4–5 minutes. Add the green onions and cook until wilted, 2–3 minutes.
  • Step 6
  • Remove from heat and stir in sesame oil. Sprinkle with sesame seeds and serve immediately.
