Salty and sweet flavors playfully combine in Food Network Magazine's baked salmon, marinated in a mixture of soy sauce, maple syrup, and orange juice, and garnished with cauliflower and red cranberry flakes.

Ingredients:

  • 4 salmon fillets (140g each) (preferably wild) from the center of the fish
  • 4 cups cauliflower florets (1 small head)
  • 2 tablespoons low-salt soy sauce
  • 2 tbsp. maple syrup
  • 1 tbsp fresh orange juice
  • 3 crushed cloves of garlic
  • 1/4 cup low-fat, low-sodium chicken broth (or water)
  • Cooking spray
  • Coarse salt and freshly ground black pepper
  • 1 tbsp extra-virgin olive oil
  • 2 tablespoons dried cranberries
  • 2 tablespoons chopped pistachios or almonds
  • 1 teaspoon grated orange zest
  • 2 tablespoons chopped fresh parsley
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 205°C. In a large bowl, combine soy sauce, maple syrup, orange juice, 2 cloves of garlic, and 2 tablespoons of water. Add the salmon fillet and turn it over to coat with the marinade. Cover and refrigerate for 20 minutes.
  • Step 2
  • While the fish is marinating, place the cauliflower and broth in a microwave-safe bowl, cover loosely with plastic wrap and microwave until tender, 6 minutes.
  • Step 3
  • Spray a rimmed baking sheet with cooking spray. Pat the fish dry, season with salt and pepper, and place on the prepared baking sheet. Bake until lightly golden around the edges, 8-10 minutes.
  • Step 4
  • While the fish is baking, heat the olive oil in a large skillet over medium-high heat. Add the remaining garlic clove and cook, mashing it with a spoon, until softened, about 2 minutes. Add the cauliflower and broth, cranberries, pistachios, orange zest, parsley, 1/4 teaspoon salt, and pepper to taste. Heat through, stirring. Serve with the fish.
