Shred and grate everything and dress with a mixture of red wine vinegar, olive oil, grainy mustard, and honey, which adds a richer flavor to the vinaigrette. Let the salad sit for a few minutes before serving to allow the vegetables to marinate slightly. Serve garnished with fresh parsley.

Combine 1/2 of a small, thinly sliced ​​red onion with 3 tablespoons red wine vinegar; let sit for 10 minutes. Stir in 2 tablespoons olive oil and 1 teaspoon each grainy mustard and honey.
