Cabbage and beets are the most readily available ingredients for a healthy, vitamin-rich winter salad. This salad is made with only fresh vegetables: red cabbage, beets, carrots, and red onions. Shred and grate everything and dress with a mixture of red wine vinegar, olive oil, grainy mustard, and honey, which adds a richer flavor to the vinaigrette. Let the salad sit for a few minutes before serving to allow the vegetables to marinate slightly. Serve garnished with fresh parsley.

Combine 1/2 of a small, thinly sliced red onion with 3 tablespoons red wine vinegar; let sit for 10 minutes. Stir in 2 tablespoons olive oil and 1 teaspoon each grainy mustard and honey. Coarsely grate 2 carrots and 1 beetroot; add to the bowl with the dressing along with 1/2 of a thinly shredded red cabbage and 1/2 cup parsley; season with salt and pepper to taste.
