This salad is made with fresh kale and is packed with vitamins and fiber. For easier digestion, shred the raw kale thinly and, if desired, crush it with your hands. Toss with an Asian-inspired dressing of sesame oil, rice vinegar, honey, and soy sauce, and serve sprinkled with walnuts and black sesame seeds. The flavor is bright and refreshing, a perfect complement to meat.

In a large bowl, combine 3 tablespoons vegetable oil, 2 tablespoons rice vinegar, 4 teaspoons sesame oil, 3 teaspoons lightly salted soy sauce, 2 teaspoons honey, and 1/2 teaspoon coarse salt. Chop 1 bunch of kale, add to the bowl with the dressing, and toss to combine. Let sit for 10 minutes. Add 3/4 cup chopped toasted walnuts and 2 tablespoons black sesame seeds. Season with pepper to taste.
