This delicious and healthy Asian-inspired salad is rich in fiber and protein. It captivates with its rich textures of juicy kale, radishes, crunchy peanuts, edamame beans, and a delicate peanut butter dressing. Serve as an appetizer or as a side dish to Asian-style fried chicken.


Ingredients:

  • 1/4 cup creamy peanut butter
  • 2 tbsp. l. rice vinegar
  • 2 tablespoons freshly squeezed lime juice
  • 1 tbsp. vegetable oil
  • 1 tbsp soy sauce
  • 1 tbsp. water
  • 1 tbsp. sugar
  • 2 bunches Tuscan kale, thinly sliced
  • 3/4 cup frozen shelled edamame beans, thawed
  • 7 radishes, thinly sliced
  • 1/2 cup chopped salted peanuts, plus extra for serving
  • Black sesame seeds, for sprinkling
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

    Step 1
  • In a large bowl, combine peanut butter with rice vinegar, lime juice, vegetable oil, soy sauce, water and sugar.
  • Step 2
  • Add kale, edamame, radishes, and peanuts; mix well. Sprinkle with black sesame seeds and additional peanuts.
