A juicy, vitamin-rich salad of fresh vegetables and greens is the perfect side dish for a hearty holiday meal. It features healthy kale, freshly grated butternut squash, and juicy pomegranate seeds, rich in vitamins and minerals. Crispy bacon bits fried with rosemary add a tantalizing flavor that everyone will want to try. Drizzle with a hot dressing made from bacon fat and toss to gently wilt the kale.


Ingredients:

  • 5 tablespoons red wine vinegar
  • 4 teaspoons of honey
  • 1 large or 2 small bunches Tuscan kale, stems trimmed and leaves chopped (about 16 cups)
  • Half a red onion, thinly sliced
  • 1/4 medium butternut squash, peeled and grated (1.5 cups)
  • 1 tbsp extra-virgin olive oil
  • 4 thick slices bacon, cut into pieces
  • 1 teaspoon chopped fresh rosemary
  • 1/4 tbsp. pomegranate seeds
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large bowl, combine vinegar, honey, and a pinch of salt and black pepper. Add the cabbage, red onion, and pumpkin and toss. Stir with your fingers until everything is evenly coated and the cabbage has softened slightly.
  • Step 2
  • In a small saucepan, heat the olive oil over medium-high heat. Add the bacon and cook, stirring occasionally, until crisp, 10-12 minutes. Remove from heat and stir in the rosemary. Let it sit until it stops sizzling, about 1 minute.
  • Step 3
  • Using a slotted spoon, transfer the bacon pieces to the salad. Pour the rendered fat into a small bowl; you should have about 5 tablespoons of fat (if not enough, add olive oil). Pour the warm fat into the salad and toss well; season with salt and pepper to taste. Sprinkle with pomegranate seeds.
