Cut 2 heads of cauliflower into large florets; toss with olive oil and salt. Bake on 2 baking sheets at 425°F (220°C) until browned and tender, 35 to 40 minutes; cool.

In a large bowl, combine 1/3 cup each yogurt and olive oil, 1/2 cup grated Parmesan, 1 teaspoon Worcestershire sauce, 1 teaspoon Dijon mustard, and the juice of 1 lemon.

Add the cauliflower, 1 cup each croutons and fresh parsley, and 1/4 cup toasted pine nuts. Season the salad with salt and pepper and toss.
