Ingredients:
- 450 g chicken breast fillet
- 3 cloves of garlic
- 1/2 cup olive oil, plus more for rubbing
- 2-4 anchovy fillets, chopped
- Juice of 1 lemon
- Coarse salt and freshly ground pepper
- 4 slices Italian focaccia, or whole grain Italian bread
- 4 heads romaine lettuce, cut in half lengthwise
- 3/4 cup grated Parmesan cheese, plus more for sprinkling

- Step 1
- Preheat grill or grill pan to medium heat. Step 2
- Prepare Caesar dressing: In a blender, combine 2 cloves garlic, 1/2 cup olive oil, anchovies, and lemon juice until smooth; season with salt and pepper. Step 3
- To grill chicken: Beat the breasts thoroughly, then season with salt and pepper, and toss with 1 tablespoon of Caesar dressing.
Place the chicken breasts in a grill pan and fry until golden brown and crispy, 3-4 minutes per side. Cut into small pieces.
Step 4 - Prepare grilled bread and vegetables: grate the slices focaccia flatbreads Olive oil on both sides and place on the grill until charred, about 2 minutes. Rub the bread with the remaining garlic clove. Cut into cubes.
Coat the romaine lettuce hearts with 1-2 tablespoons of Caesar dressing. Place in a grill pan and lightly grill on each side for 1-2 minutes. Chop coarsely.
Step 5 - Combine grilled chicken pieces, bread cubes, romaine lettuce, Parmesan cheese, and the remaining Caesar dressing in a salad bowl. Divide among servings and sprinkle with Parmesan cheese and ground pepper.
