Ingredients:

  • 450 g chicken breast fillet
  • 3 cloves of garlic
  • 1/2 cup olive oil, plus more for rubbing
  • 2-4 anchovy fillets, chopped
  • Juice of 1 lemon
  • Coarse salt and freshly ground pepper
  • 4 slices Italian focaccia, or whole grain Italian bread
  • 4 heads romaine lettuce, cut in half lengthwise
  • 3/4 cup grated Parmesan cheese, plus more for sprinkling
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat grill or grill pan to medium heat.
  • Step 2
  • Prepare Caesar dressing: In a blender, combine 2 cloves garlic, 1/2 cup olive oil, anchovies, and lemon juice until smooth; season with salt and pepper.
  • Step 3
  • To grill chicken: Beat the breasts thoroughly, then season with salt and pepper, and toss with 1 tablespoon of Caesar dressing.

    Place the chicken breasts in a grill pan and fry until golden brown and crispy, 3-4 minutes per side. Cut into small pieces.
  • Step 4
  • Prepare grilled bread and vegetables: grate the slices focaccia flatbreads Olive oil on both sides and place on the grill until charred, about 2 minutes. Rub the bread with the remaining garlic clove. Cut into cubes.

    Coat the romaine lettuce hearts with 1-2 tablespoons of Caesar dressing. Place in a grill pan and lightly grill on each side for 1-2 minutes. Chop coarsely.

  • Combine grilled chicken pieces, bread cubes, romaine lettuce, Parmesan cheese, and the remaining Caesar dressing in a salad bowl. Divide among servings and sprinkle with Parmesan cheese and ground pepper.
