Ingredients:


Salad
  • 110 g rice noodles
  • 2 cups carrots, cut into thin strips
  • 1 cup bean sprouts
  • 0.5 cup fresh parsley or cilantro leaves
  • 0.5 cup chopped fresh basil
  • 1/4 tbsp chopped fresh mint
  • 6 Iranian cucumbers, thinly sliced
  • 1 romaine lettuce heart, finely shredded
  • Homemade Peanut Dressing
  • 2 tbsp chopped salted roasted peanuts

Peanut dressing
  • 1/4 cup creamy peanut butter
  • 2 tablespoons freshly squeezed lime juice
  • 1 tbsp. honey
  • 1 tbsp unsalted rice vinegar
  • 1 tbsp soy sauce
  • 2 tsp. sesame oil
  • 1 tsp. sambal-olek
  • 0.5 tsp finely grated fresh ginger
  • 1 small clove of garlic, finely grated
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the noodles in a large bowl and cover with boiling water. Let sit for 3 minutes, then drain and rinse under cold water to cool. Drain the noodles thoroughly, then transfer them to a large salad bowl and trim with kitchen shears.
  • Step 2
  • Add carrots, bean sprouts, parsley, basil, mint, cucumber, and romaine lettuce to the noodle bowl. Add the peanut dressing and toss to coat the noodles and vegetables. Transfer to a serving bowl and sprinkle with chopped peanuts.
  • Step 3
  • Peanut dressing:
    Yield: about 0.5 cups

    In a small bowl, combine the peanut butter, lime juice, honey, vinegar, soy sauce, sesame oil, sambal oelek, ginger, and garlic. Add a little water to make the dressing runny.
