A hint of tart natural yogurt and lemon make this cucumber salad with dill and mint incredibly refreshing. Depending on the thickness, you may need slightly more or less yogurt; the cucumbers should be evenly coated in the creamy dressing. Serve the salad as an appetizer or as a side dish with meat or fish dishes.

Ingredients:

  • 0.5 cup natural yogurt
  • 1 small clove of garlic, finely grated
  • Finely grated zest and juice of 1 lemon
  • 3 small cucumbers, such as Kirby, cut into pieces
  • 1 shallot, chopped (about 1/2 cup)
  • 1/4 cup fresh dill, coarsely chopped, plus extra for serving
  • 1/4 cup fresh mint leaves, coarsely chopped, plus extra for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

    Step 1
  • In a medium bowl, combine the yogurt, garlic, lemon zest and juice, 1 teaspoon salt, and a pinch of freshly ground black pepper. Stir until smooth. Add the cucumbers, shallots, dill, and mint; stir until the cucumbers are well coated. Serve garnished with dill and mint.
