A cucumber cooler is one of the most refreshing summer cocktails. Cucumbers, gin, citrus, mint… an invigorating combination. And if you serve it all as a frozen slushie, your enjoyment is doubled. To make it, blend frozen cucumbers, gin, fresh mint, frozen lemonade concentrate, and a touch of elderflower liqueur, which balances the flavors with its subtle sweetness. The resulting snow-like mixture is topped with soda water and garnished with a cucumber slice.

Peel, seed, and slice 2 cucumbers; freeze for 2 hours. Chill 4 tall glasses. Combine the frozen cucumbers, 90 ml gin, 60 ml elderflower liqueur, 1/2 cup fresh mint, and 1/4 cup frozen lemonade concentrate in a blender and blend until smooth. Divide among glasses, top with club soda, and stir. Garnish with a cucumber stick.
