This refreshing, non-alcoholic drink with an invigorating flavor is made with watermelon pulp, which is blended into a liquid consistency with a fragrant sugar syrup infused with jalapeño peppers and thyme sprigs. Serve over plenty of ice. Its flavor is refreshing, with just a hint of a pleasant heat.

In a saucepan over medium heat, heat 1/2 cup each of sugar and water until the sugar dissolves. Add half a stemmed jalapeño pepper (remove the seeds to reduce the heat) and 2 sprigs of thyme and let steep for 5 minutes. Discard the jalapeño and set aside the thyme. In a blender, puree the simple syrup with 5 cups of chopped seedless watermelon. Serve over ice, garnished with the reserved thyme sprigs.
