This incredibly refreshing smoothie is rich in vitamin C thanks to the addition of watermelon. When watermelon is in season, dice the flesh and store it in the freezer for easy access to a delicious smoothie. Cucumber pairs well with the watermelon for an equally refreshing drink, while sour milk adds a pleasant creamy texture. Ingredients for the recipe:
- 1 piece of cucumber, 5 cm in size, peeled and coarsely chopped (about 0.5 cups) + 1 slice for garnish
- 3 tbsp. low-fat yogurt or kefir
- 1 tbsp honey, optional
- Juice of half a lime (about 1 tbsp)
- 2 cups diced seedless watermelon, frozen

Cooking the dish according to the recipe:
- Combine the cucumber, sour milk, honey, if using, and lime juice in a blender. Blend at high speed until smooth.
- Add half of the frozen watermelon and blend until almost smooth, stopping the blender as needed and pressing down on the ingredients with a spatula or wooden spoon to aid in the blending process.
- Add the remaining frozen watermelon and continue blending until smooth. Add 1-2 tablespoons of water if needed to thin the smoothie. Pour into a glass and garnish with a cucumber slice.
