Prickly pears can be used as the main ingredient in delicious, invigorating cocktails. To make them, scoop them out of the peel (wear gloves!) and boil them down with sugar until they form a syrup. This natural syrup is then mixed with tequila, orange juice, lime juice, and cold soda. A kilogram of prickly pears can make enough syrup for a pitcher of the drink—perfect for a crowd. Serve with plenty of ice and enjoy its smooth, refreshing flavor.

Halve 1 kg (2.2 lb) prickly pears (about 8) lengthwise, scoop out the pulp, and chop with a knife. Place in a saucepan and add 1/2 cup sugar; let sit for about 5 minutes, until the juices release. Bring to a boil, then remove from heat. Mash the fruit and let sit for 10 minutes. Strain through a fine sieve and refrigerate the syrup for 1 hour. Combine the chilled syrup in a pitcher with 1 1/2 cups tequila, 1 cup orange juice, and 1/2 cup lime juice. Add 3 cups cold sparkling water. Serve over ice.
