Ingredients:

  • 1 cup sweet coconut flakes
  • 1 cup natural yogurt
  • 2 tablespoons of honey
  • 1/4 cup dark rum or spiced rum
  • 2 tbsp finely chopped mint leaves
  • 1 pack (1 liter) of fig pieces
  • 1 pack (1 liter) of pineapple pieces
  • 1 pack (1 liter) of strawberry pieces
  • 1/3 cup goji berries
  • Nuts, for sprinkling
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 150°C.

    Spread the coconut flakes in a single layer on a baking sheet. Toast them in the oven until pale golden brown, about 8 minutes. Be careful not to burn them.
  • Step 2
  • In a bowl, whisk together the yogurt, honey, rum, and mint. In another large bowl, combine the fruit and goji berries. Pour the yogurt mixture over the fruit and toss to combine. Let sit for 10 minutes to allow the fruit to soak in. Sprinkle with toasted coconut and nuts, and serve.
