It's best to use day-old or stale bread, such as brioche, challah, or baguette. For extra fluff, bake the toast briefly in the oven after toasting. Drizzle the toast with chocolate syrup, dust with powdered sugar, and serve with a cup of coffee.

Make perfect French toast using 12 thick slices of baguette.
Preheat oven to 350°F (175°C). In a shallow bowl, whisk together 4 eggs, 1 1/2 cups light cream or milk, 1/2 teaspoon nutmeg, 1 teaspoon vanilla extract, 1 teaspoon sugar, and a pinch of salt. Melt 1/2 tablespoon (75g) butter in a nonstick skillet over medium heat. Working in batches, dip 6 thick slices of white bread, challah, or a roll into the egg mixture and cook in the skillet until golden brown, 2 to 3 minutes per side, adding more butter if necessary. Transfer the toasts to a baking sheet and bake until puffed, 8 to 10 minutes.
In the microwave at 50% power, melt 3 ounces (90 g) of chopped dark chocolate with 1/3 cup (1/3 cup) maple syrup for 1 minute; stir until smooth. Brush the French toast with the chocolate syrup and dust with powdered sugar.
