Ingredients for the recipe:
- 1.5 cups heavy cream
- 4 bags of chamomile tea
- 1 teaspoon grated lemon zest + 1 tablespoon lemon juice
- 1/3 cup + 1 tbsp honey
- 1.5 cups of milk
- 2 tsp vanilla extract
- 8 large eggs
- Coarse salt
- 4 tablespoons unsalted butter
- 8 slices brioche, 2.5 cm thick.
- 0.5 tbsp. mascarpone cheese
- 2 cups of mixed fresh berries

Cooking the dish according to the recipe:
- Preheat oven to 350°F (175°C). In a small bowl, combine lemon zest, juice, and 1/3 cup honey. In a small saucepan, pour the cream over the tea bags. Bring to a boil, then immediately remove from heat. Let steep for 15 minutes, then remove the tea bags.
- In a medium bowl, combine the chamomile cream, milk, vanilla, eggs, remaining 1 tablespoon honey, and a pinch of salt.
- Heat a large nonstick skillet over medium heat. Add 1 tablespoon of butter and let it melt. Place 2 slices of bread in the butter mixture and let them soak for 10-30 seconds. Place the soaked bread in the skillet and cook until golden brown, 2-3 minutes per side.
- Transfer the French toast to a baking sheet and keep warm in the oven. Add another 1 tablespoon of butter, dip 2 more slices of bread in the cream and toast; transfer to the baking sheet. Repeat with the remaining butter, bread, and cream mixture. Serve the French toast with a dollop of mascarpone and fresh berries, drizzled with lemon honey.
