The key ingredients are oat milk, flaxseed flour, and cornstarch. These ingredients ensure tender French toast with a deliciously golden and crispy crust. Sprinkle the finished toast with powdered sugar and drizzle with maple syrup. Perfect for breakfast or dessert.

- 2 tablespoons cornstarch
- 2 tablespoons of sugar
- 1 teaspoon ground cinnamon
- 1 tsp vanilla extract
- 1 loaf of sourdough bread left over from yesterday (450 g)
- 4 tablespoons unsalted vegan butter
- Powdered sugar, for serving
- Warm maple syrup, for serving

Cooking the dish according to the recipe:
- In a casserole or pie dish, combine the oat milk, flaxseed meal, cornstarch, sugar, cinnamon, and vanilla extract. Set the batter aside for 15 minutes.
- Meanwhile, cut the bread into 2cm thick slices, setting the crusts aside for another use.
- Heat a large nonstick skillet over medium heat. Add 1 tablespoon of vegan butter, stirring to coat the pan. Place 3 slices of bread in the batter and gently press them down for 10 seconds; flip and dip the other side for 10 seconds. Remove, let any excess batter drip off, and carefully return the slices to the skillet.
- Cook without moving until browned and crisp, 2 to 4 minutes per side.
- Repeat with the remaining butter, bread, and batter, adjusting the heat as needed. Dust the French toast with powdered sugar and serve with warm maple syrup.
