To make delicious and mouth-watering French toast, whether vegan or not, it's important to use stale bread, even day-old, as fresh bread will likely fall apart quickly when soaked in the cream. Almond milk, soy yogurt, and cornstarch replace regular milk and eggs in this vegan French toast. Toasting makes the toast firmer, but if you prefer a soft, almost creamy texture, let the bread soak in the milk-yogurt mixture for 2 minutes on each side. Serve drizzled with maple syrup for breakfast or dessert.

Ingredients for the recipe:
- 1 and 1/4 cups unsweetened almond milk
- 0.5 cup soy yogurt
- 2 tablespoons cornstarch
- 2 tablespoons of sugar
- 1 teaspoon ground cinnamon
- 1 tsp vanilla extract
- 4 tbsp refined coconut oil, melted
- 1 loaf (450 g) of yesterday's Italian bread, cut into 2 cm thick slices, remove the crusts
- Warm maple syrup, for serving

Cooking the dish according to the recipe:
- Place the baking sheet on the oven rack and preheat the oven to 95°C.
- Combine almond milk, soy yogurt, cornstarch, sugar, cinnamon, and vanilla extract in a blender and blend until smooth. Pour into a casserole or glass pie dish.
- Heat a large nonstick frying pan over medium heat. Add 1 tablespoon coconut oil, swirling the pan to coat completely. Place 3 slices of bread in the milk-yogurt mixture, let soak for about 1 minute on each side, then carefully place the slices in the pan. Cook, without moving, until golden brown and crispy, 2-4 minutes per side (adjust the heat as needed). Serve immediately or transfer to a baking sheet in the oven to keep the French toast warm. Repeat with the remaining coconut oil, bread, and milk-yogurt mixture. Serve with maple syrup.
