Damaris Phillips's recipe for this refreshing salad was inspired by the Mint Julep. It has everything you need for a classic Southern cocktail: whiskey, sugar, and fresh mint. The cucumbers are marinated for several hours in a quick bourbon-honey brine and tossed with mint just before serving.

Ingredients for the recipe:
- 1 cup white wine vinegar
- 1 cup of sugar
- 0.5 cups honey
- 3 tbsp bourbon
- 4 cucumbers, sliced into thin half rings
- 1 medium sweet onion, halved and thinly sliced
- 3 sprigs of mint, leaves finely chopped

Cooking the dish according to the recipe:
- Combine vinegar, sugar, honey, bourbon, and 1 teaspoon of salt in a saucepan. Bring to a boil over medium heat, stirring until the sugar and salt dissolve. Set aside to cool.
- Combine the cucumbers and onions in a large bowl. Pour the brine over them and let marinate in the refrigerator until completely chilled, 3–4 hours. When ready to serve, add the mint and toss to combine.
