A mint julep is a wonderful combination of fresh mint, bourbon, and plenty of crushed ice, making it a truly refreshing summer drink. The mint syrup can be made ahead of time and stored in the refrigerator. Traditionally, juleps are served in silver or pewter bowls, but if you don't have one, use wide glasses.

- Prepare mint syrup:
Combine sugar and 1 tablespoon of water in a small saucepan and bring to a boil over medium heat, stirring constantly until the sugar dissolves. Remove from heat and add the mint sprigs, pressing them down with a wooden spoon to submerge them. Let cool to room temperature, then remove from the syrup and discard. Refrigerate the syrup for at least 1 hour. You will have about 1.5 cups of syrup; cover and refrigerate for up to 2 weeks. - Prepare a drink:
Place mint leaves and 30 ml of mint syrup in a small glass or julep cup. Muddle with the handle of a wooden spoon. Add bourbon. Fill the glass with crushed ice. Garnish with a mint sprig.
The best way is to store it in the refrigerator.
To keep mint fresh, wrap it in a damp paper towel, then place it in a zip-lock bag and refrigerate for up to a week.
