Toss half an 800g bag of frozen fancy fries with 1 tablespoon olive oil, 1/4 teaspoon each coarse salt, black pepper, and dried dill. Place on a baking sheet and bake at 425°F (220°C) until golden brown, 30 minutes. Meanwhile, in a large bowl, toss 1/4 cup thinly sliced ​​red onion with 2 tablespoons white wine vinegar and 1 tablespoon grainy mustard; let stand 15 minutes. Stir in 3 tablespoons olive oil.
