Beef tenderloin pieces are grilled and served directly on short wooden skewers. This gives them a more aesthetically pleasing appearance and makes them easier to serve as an appetizer. For easy turning on the grill, thread one piece onto two skewers. The beef is pre-brushed with a garlic-mustard honey glaze and basted with it during grilling, giving the meat a luscious glossy finish and a wonderful sweet-tart, spicy flavor.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Meat

  • 1 beef tenderloin weighing 1 kg, cut in half and sliced ​​into 2.5 cm thick slices.
  • Garlic-Mustard Glaze, recipe below

Garlic-mustard glaze

  • 4 cloves garlic, finely chopped
  • 1/4 cup grainy mustard
  • 2 tablespoons Dijon mustard
  • 2 tsp paprika
  • 1/4 teaspoon coarse salt
  • 1/4 tsp ground black pepper
  • 1 tbsp. lightly salted soy sauce
  • 2 tablespoons white wine vinegar
  • 1 tbsp. honey
  • Special equipment: 15 cm long wooden skewers, soaked in cold water for 30 minutes

Cooking the dish according to the recipe:


  1. Preheat the grill to high heat. Thread 2 pieces of beef onto 2 skewers, laying the meat flat. Generously brush both sides with the garlic-mustard glaze. Grill for 2-3 minutes per side, until crispy and medium-rare, brushing with any remaining glaze as needed. Remove from the grill and serve.
  2. Garlic Mustard Glaze:

    Combine all ingredients in a small bowl. Cover and let sit at room temperature for 30 minutes before using.
