Thinly sliced pork loin cooks in minutes and is perfect for a quick stir-fry. Sauté it with bell peppers and drizzle with a sauce made with apple cider vinegar, brown sugar, garlic, and soy sauce, which thickens in the pan and turns into a delicious sweet-tart glaze. Serve the stir-fry with cooked rice.

- 0.5 cup apple cider vinegar
- 2 tablespoons brown sugar or molasses
- 1 tbsp cornstarch
- 3 cloves garlic, finely grated
- 2 green onions, finely chopped
- 2 tablespoons of vegetable oil
- 3 bell peppers (red, yellow and/or orange), thinly sliced
- 4 natural boneless pork chops, 2 cm thick, sliced into 0.5 cm thick slices.
- 2 cups cooked white rice, for serving

Cooking the dish according to the recipe:
- Combine soy sauce, vinegar, brown sugar, cornstarch, garlic, and green onions in a small bowl and set aside.
- Heat vegetable oil in a large nonstick skillet over medium-high heat. Add the bell pepper, 1/2 teaspoon salt, and a pinch of freshly ground black pepper. Cook, stirring constantly, until the pepper is crisp-tender, about 3 minutes.
- Add the pork and cook, stirring constantly, for 1 minute. Add the soy sauce mixture and cook until the pork is cooked through and glazed, 1 to 2 minutes. Serve with rice.
