Ingredients:

  • 1/4 cup sugar
  • 1 tbsp. vegetable oil
  • 5 cloves garlic, thinly sliced
  • 450 g skinless and boneless chicken thighs, cut into 1 cm pieces.
  • 1-2 tbsp fish sauce
  • 1 red chili pepper (such as Fresno), seeded and thinly sliced ​​(optional)
  • 1/4 cup fresh cilantro leaves, chopped, plus extra for sprinkling
  • 2 green onions, thinly sliced, plus extra for sprinkling
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.

Preparation:

    Step 1
  • In a large saucepan, bring water to a boil and season with salt. Add the broccoli and cook, stirring, until bright green and crisp-tender, about 3 minutes. Using a slotted spoon, transfer to a large bowl. Add the rice noodles and return to a boil. Remove from heat and let sit while you cook the chicken, stirring occasionally.
  • Step 2
  • Combine the sugar with 1 tablespoon of water in a large skillet and heat over medium-high heat, stirring until the sugar dissolves. Cook, without stirring, until the caramel turns a deep amber color, about 3 minutes. Carefully add the vegetable oil and garlic and cook until the garlic is golden, about 30 seconds.
  • Step 3
  • Add the chicken and fish sauce and cook, stirring, until the chicken is no longer pink, about 2 minutes. Remove from heat and stir in the chili pepper, cilantro, and 1/4 teaspoon black pepper.

  • Drain the noodles and add them to the bowl with the broccoli. Add the green onions and chicken and toss to combine. Divide among bowls and garnish with cilantro and green onions.
