How to Make Broccoli Cashew Stir-Fry

Time: 10 min.
Complexity: easily

Make a delicious Asian-inspired broccoli appetizer, livening up the flavor of this healthy cabbage with garlic, ginger, and oyster sauce. This dish uses both the florets and the juicy stems, which many people unjustly discard. It's a shame, because they're also packed with healthy fiber, and the more the better. Stir-fry the broccoli in vegetable oil for a few minutes until bright green and slightly tender. Serve sprinkled with cashews for extra crunch. A wonderful side dish for roasted meat or poultry.

Recipe:

Trim the florets from 1 head of broccoli, peel, and thinly slice the stems. Heat 2 tablespoons vegetable oil in a large skillet over medium-high heat; add 4 minced garlic cloves and 4 thin slices ginger and cook until golden brown, 1 minute. Add the broccoli, 1/4 teaspoon coarse salt, and 1/2 cup water. Cook until crisp-tender, 4 minutes. Stir in 2 tablespoons oyster sauce, a splash of white vinegar, and some cashews.
