Many people find tofu too bland, but that's not the case with this recipe. Before making this stir-fry, firm pieces of baked tofu are tossed in a marinade of hot garlic sauce, soy sauce, and sesame oil, absorbing all the rich flavor. In addition to tofu, the dish includes shiitake mushrooms and a fresh stir-fry vegetable mix, which includes broccoli, bell peppers, carrots, and green beans pre-cut into the right size, and the entire frying process takes no more than 15 minutes. Perfect for a quick and delicious weeknight dinner. Serve the stir-fry with cooked brown rice and a sprinkle of cashews.


Ingredients:

  • 4 cups frozen cooked brown rice
  • 2.5 cm ginger root
  • 1/4 cup lightly salted soy sauce
  • 1 - 2 tbsp hot garlic sauce
  • 1 tbsp dark sesame oil
  • 340 g baked tofu
  • 3 tbsp. l. rapeseed oil (canola)
  • 1 package (90 g) sliced ​​shiitake mushrooms (about 2 cups)
  • 1 package (450 g) of fresh mixed vegetables with broccoli, green peas, carrots and bell peppers (not frozen)
  • 0.5 cup roasted salted cashews (halves and pieces)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Heat the rice according to the package instructions. Peel and finely grate the ginger and place it in a small baking dish or medium bowl along with the soy sauce, hot garlic sauce, and sesame oil. Stir to combine.
  • Step 2
  • Place a large skillet over medium-high heat. Cut the baked tofu into 1x2 cm pieces and add to the marinade. Stir to distribute evenly and set aside. Pour cold water into a small measuring cup or bowl and place it near the stovetop.
  • Step 3
  • Pour canola oil into the preheated skillet and swirl it to coat the bottom. Add the shiitake mushrooms and cook, stirring frequently, until softened, about 2 minutes. Add the vegetable mixture and a large pinch of salt. Cook until the vegetables are crisp-tender, 3-5 minutes. Cooking time will depend on the size of the vegetables in the mixture. If at any point the pan seems too hot, add 1-2 tablespoons of water.
  • Step 4
  • Add the marinated tofu to the vegetables along with 2 tablespoons of water. Cook until the tofu is heated through, 1-2 minutes.

  • Transfer the stir-fry to a large platter. Sprinkle with cashews and serve with brown rice.
